Born and Raised in Hawaii, you grow up eating different cultures of food. When it comes to "Fusion", Hawaii is the Godfather of "Fusion". Since the early 1900's when immigrants from Japan, China, Korea, Philippines along with the Native Hawaiians, would work the plantation fields, which sugar cane & pineapple were the main source of commercial farming. It would be common during lunch time that everyone would get together and share each other's type of food. so, growing up in Hawaii, it would be very common to see Soy Sauce (Japan), Kim Chee (Korea), Lau Lau (Hawaiian), Pickled Onions (Portuguese), Fried Noodles (China) in the fridge. The Plate Lunch called "Mixed Plate" comes from these diverse food cultures, where on one plate you would find up to 2-3 different foods.
My Passion: I love food and food is my life. I remember when I was a young boy, I used to make breakfast for my Mom in bed. It started out with cereal &fruit. Then it gradually led to cooking bacon, eggs, rice, fruit, cereal & toast.
I have a desire to keep learning and growing about food, because when it comes to food, options are endless. They are so many cultures & cuisines in the world that it makes my passion for this thing called food, ever growing.
My Hobbies: I love the water and the outdoors. I free dive as much as possible, which I get a good workout, stress reliever and I get fresh caught fish for dinner. My Mom made sure we were always playing outside, going on hiking trails with her and taking us to the beach or swimming pool. My Mom has been an integral part of my love for the outdoors and nature.
My Mission: I want people to experience my passion for food. When they dine with me, I want them to taste the heart & soul I put into their experience. I want to provide the freshest ingredients to my guests, as such working with Local Farmers like James Simpliciano of Simpli-Fresh Farms, Ho'opono Farms and Napili-Flo Farms.
